Cheap, easy and delicious meals, anyone?

This will be a good test for me to find out how many (or how few) people out there are actually reading this blog. I don't know if I want to know, but I am desperate. I'm in the middle of a brain freeze. I've been searching on the Internet and looking through recipe books for cheap, easy and delicious meals- and I am not finding very many inspiring and interesting recipes. Please help! Your recipe doesn't have to fit all three specifications- it can be cheap and delicious (not easy), or easy and delicious (not cheap)- but not cheap and easy (and NOT delicious)- that will not do.


Send me your website links and ideas for good recipes- I am in serious need!

Dearest Jenn,
You know I am no cook but I am counting on people to post on this blog too! Ok that's kind of selfish but I can't wait to see what recipes people post. So to not be selfish and give some input....here is a recipe that I'm sure everyone knows but I love it and it is sure easy, cheap (and to me) delicious:

Easy Chicken Tacos:
-use chopped cooked chicken (or in strips; seasoned or unseasoned)
-black beans
-corn
-salsa (your favorite! I like the salsa fresca from costco or my husband's recipe)
-taco seasoning
*Pour all ingredients into the crockpot on low to medium heat. Make sure you use the juices from the salsa and the black beans and corn. But if you need more just add water or chicken broth.
*After 4 to 6 hours, serve in hard or soft tortillas with sprinkled cheese, or sour cream or guacamole or all on top!
*I also like chopping up lettuce and making a salad. Oh and we add some hot sauce too.

Ok I told you it was nothing special but we love this meal!

Ok - put one cup of uncooked rice in a glass pan, dump cream of mushroom soup over it with a can of water. Place 2 - 3 just seared in a pan pork chops in it. You can add some veggies if you've got them and then cover with tin foil and bake at 350 until pork is done (pork is done at 150 degrees). Usually about 30 - 40 min. Enjoy!

Yes! I finally have an answer to this kind of post. I've been working hard at this area of my life.

My favorite cookbook these days is by a very busy working mom in our stake, who has mastered meal planning and use of food storage for fast, easy meals you make with the things you have on hand. It has revolutionized my life. It's called "I Dare You To Eat It," by Liesa Card. You can buy it at Deseret Book or amazon. com. Check out her website at www.idareyoutoeatit.com.

She pointed out that the latest issue of "Woman's Day" has a great selection of meal ideas, all based around different meats. (Liesa's meals are based on grains in her food storage). Anyway, it lays out like 30 meals for you. I bought the magazine and have tried a handful that weren't too hard and turned out good. Here is the link so you know which magazine to get:

Lastly, since pregnancy ruined my appetite for vegetables, I just ordered "The Sneaky Chef," from amazon.com, which has easy ways to sneak veggies into stuff. Jenn, I think you have "Deceptively Delicious," which I've heard is almost exactly the same. (In fact I heard the Sneaky Chef lady sued Jessica Seinfeld for copying her book.) But for those of you who don't know about either one, check it out. The recipes require some make-ahead purees but then they are easy; just keep them in your freezer.

The Sept. 2010 issue of Woman's Day has 30 (pretty easy) recipes categorized by what type of meat you use. I bought the magazine for $4 at the grocery store and tried the easy recipes; they were good.

I like the book "The Sneaky Chef" for hiding vegetables in food. You make the purees in advance but then it is really easy.
