I have discovered two new tastes this summer:
1. Watermelon Wedges with Lime & Honey (My husband's family will probably be happy to know that I have crossed over to the dark side and am now eating watermelon in copious amounts- for some reason, I can't get enough of the stuff. This lime and honey mixture gives this fruit a sweet tang and flavor that you wouldn't normally expect. Give it a try. It's delicious! Oh, and the amount you'll make below will last through A LOT of sliced watermelon).
1/2 cup freshly squeezed lime juice
3 Tb clover honey
1-inch thick sliced watermelon, cut in quarters (like pieces in a pie)
Whisk together the lime juice and honey in a bowl until the honey dissolves. Drizzle mixture over watermelon; serve immediately.
2. Mustard BBQ Sauce- this sauce is the sweet nectar of life. Believe me, I am not a huge mustard fan- I don't like eating straight mustard on sandwiches or anything like that. But I do like that mustard helps bring out flavor in different types of sauces- it also adds a certain spice as well. This type of BBQ sauce is big in this region of the South. LOVE IT.
1/2 cup Dijon mustard
3 Tb clover honey
1 Tb light brown sugar
3 Tb rice-wine vinegar or cider vinegar
1 tsp soy sauce
Few dashes Tabasco sauce
1/4 tsp salt
1/4 tsp black pepper
Whisk together all ingredients in a bowl; cover and refrigerate for at least 1 hour and up to 24 hours before using. The longer the sauce sits in the refrigerator, the better the flavor becomes. Bring to room temperature before using.
