I made this cake for two couples in our neighborhood who had recently had babies- to help with their "sleep deprived state." I don't know if the cake really helped all that much on that front, but it sure tasted amazing! My sister-in-law mentioned that a good name for this cake would be "Finals Cake-" another time of life when your sleep reserves are at an all-time low. Call it what you want- this cake recipe is a keeper! Really moist and lemon-y, and easy to make. Enjoy!
Mountain Dew Cake
1 box lemon cake mix
1 3.4-oz box lemon flavored instant pudding mix
1 12-oz can Mountain Dew soda (not diet- there's nothing diet about this)
3/4 cup vegetable oil
4 large eggs
Mountain Dew Icing
1/2 cup butter
7 Tb Mountain Dew (again, not diet)
1 tsp vanilla extract
Powdered sugar (whatever amount fits your preferred consistency and taste)
Preheat oven to 350 degrees. Lightly grease and flour bundt pan. In a large bowl, combine cake mix and pudding mix. Add soda, oil, and eggs. Beat at medium speed with an electric mixer for two minutes, or until smooth. Pour batter into prepared pan, and bake for 45-50 minutes, or until a wooden pick inserted in center comes out clean. Let cool in pan for 10 minutes. Remove from pan and set on a wire rack, with wax paper laid out beneath (this will catch the dripping icing).
For Mountain Dew Icing, bring butter and Mountain Dew to a boil in a saucepan, stirring until butter melts. Remove from heat; whisk in powdered sugar and vanilla until smooth.
Drizzle slightly warm cake with Mountain Dew Icing.
