Moroccan Quinoa Salad

Ok, this salad is fantastic. The spices are not too strong, and all of the ingredients make the end product taste so fresh- plus, the texture is to die for. Well, maybe not to die for, but you get the idea. This is a GOOD quinoa salad.


Moroccan Quinoa Salad
1 1/2 cups dried quinoa, cooked (about 4 cups cooked)
1 bunch green onions, thinly sliced
15 oz can garbanzo beans, drained and rinsed well
1/2 cup toasted chopped almonds
1 cup chopped fresh cilantro leaves

Vinaigrette:
1 tsp salt
1/2 tsp ground black pepper
1 tsp sugar
1 tsp ground cumin
1/2 tsp ground turmeric
1 tsp ground coriander
Juice and zest of 1 lemon
1/4 cup olive oil

Cook quinoa according to directions on box or bag. In a bowl, combine the cooked quinoa, onions, garbanzo beans, almonds, and cilantro. Whisk together the ingredients for the vinaigrette in a small bowl. Pour vinaigrette over the quinoa mix and refrigerate until ready to serve. Serves 8. Can be served at room temperature.
