Basil Chicken Over Whole Wheat Pasta

This is one of the easiest, fastest, and tastiest recipes I have tried all summer- I LOVE it! I discovered basil this year and I love using it in recipes- it's healthy and adds a lot of flavor. Make sure you get your basil at the Farmer's Market (you get more for your buck, and it's really fresh!).

Basil Chicken Over Whole Wheat Pasta

1 package whole wheat pasta
2 tsp olive oil
1/2 cup finely chopped onion
1 clove garlic, minced
2 cans diced tomatoes
2 cups boneless chicken breast, cooked and cubed
1/4 cup chopped fresh basil (or more, if your heart so desires)
1/2 tsp salt
1/8 tsp hot pepper sauce
1/4 cup parmesan cheese

In a large pot of salted boiling water, cook pasta until it is al dente, about 8-10 minutes. Drain and set aside.

In a large skillet, heat oil over medium-high heat. Saute the onions and garlic. Stir in the tomatoes, chicken, basil, salt and hot pepper sauce. Reduce heat to medium, and cover skillet. Simmer for about 5 minutes, stirring frequently, until mixture is hot and tomatoes are soft.

Serve sauce with pasta and parmesan cheese (don't forget your vegetable side!).
