Carrot Burgers- don't knock it until you've tried it

I haven't seen a lot of recipes lately that have been all that inspiring- nothing that has made me think, "oh yeah, I definitely want to try that one, that looks really good." When I saw this recipe, though- it made me pause. Carrots? In burgers? Carrots, the main ingredient in burger form? Weird. But there were so many good reviews- the author even said this was a favorite of her kids while they were growing up. So I thought, what the heck, I have this huge Costco bag of baby carrots, I need to use them somehow... I'll make carrot burgers.

I made them tonight- and they were actually really good! The only problem I ran into was keeping the burgers together- you may want to add another egg to the recipe, just to help things stick together more. Remember to really mush everything together with your hands. Anyways, my husband and I ate them with those Oroweat Whole Wheat Sandwich Thins (100 calories per bun- great option for sandwiches and burgers), lettuce, tomato, cucumbers, and hummus. The burgers had a delicious flavor and texture- I guess there's the cornflakes to thank for that- and a nice crunchiness from the carrots, onions and celery. And two bonuses- it's a quick and cheap meal. Even my husband liked them. Not bad, eh? These could also make a unique appetizer- just serve them with a side of hummus. Enjoy!

Carrot Burgers

1 1/2 cups diced carrots
2 cups crushed cornflakes
2 eggs, beaten (you might want to try 3 eggs total- might help keep things together more)
1/2 cup finely chopped celery
1/4 cup finely chopped onion
1/2 tsp salt
1/4 tsp sugar
1/2 tsp pepper
2 Tb vegetable oil
Hamburger buns

Place carrots in a saucepan with a small amount of water. Bring to a boil; reduce heat. Cover and cook for 5 minutes or until tender; drain. In a bowl, combine carrots, cornflakes, eggs, celery, onion, salt, sugar and pepper; mix well. Form into six patties. Heat oil in a skillet over medium heat; cook patties for 4 minutes on each side or until browned. Serve on buns if desired.
