Two awesome ways to eat fresh summer veggies

I tried the following recipes in the past week, and I loved them! They are an awesome way to eat the fresh summer veggies and herbs you buy at the farmer's market-

Summer Vegetable Frittata
From Gourmet magazine, with a couple of changes by me

6 eggs
Basil (about 1/4 cup)
1 Tb chopped fresh parsley
1/4 tsp salt
1/4 tsp pepper
1-2 oz ham (or prosciutto), chopped
1 Tb olive oil
Rainbow swiss chard (roughly 5 medium leaves- you can add more, though), stems and leaves separated and roughly chopped
1 green pepper
4-5 scallions, chopped
Parmesan cheese

Whisk together eggs, basil, parsley, salt, and pepper in a bowl. Heat oil in a medium sized skillet over moderate heat. Add swiss chard stems and cook until tender, about 4 minutes. Add green pepper, cook for 4 minutes. Add chard leaves and cook until wilted, about 8 minutes. Add scallions and cook for 1-2 minutes, until just wilted. Pour egg mixture into skillet and cook, lifting up cooked egg around edge using a spatula to let as much raw egg as possible flow underneath. Cook until egg is set and done. Sprinkle cheese evenly over top.

Green Bean Stir-Fry

1 Tb soy sauce
2 garlic cloves, minced
1 tsp sesame seeds, toasted
1 tsp brown sugar
1 tsp peanut butter
3/4 pound fresh green beans, trimmed
2 tsp vegetable oil

In a bowl, combine the soy sauce, garlic, sesame seeds, brown sugar and peanut butter; set aside. In a large skillet, stir-fry the green beans in oil until crisp-tender. Remove from the heat. Add the soy sauce mixture, stir to coat, then serve.

im going to have to try those green beans! that sounds soooo goood!
